Gastronomy in Paestum is based on the principles of Mediterranean diet. Recipes are simple and balanced and the main ingredient is surely mozzarella, the famous cheese produced using buffalo milk.
Mozzarella produced in Piana del Sele, where Paestum is situated, is famous all over the world and was labelled with DOP mark (denomination of protected origin).
Mozzarella is still produced with traditional rules and techniques. Milk from buffalo is very fat and rich in proteins. Buffalos have been bred in these territories since 1000 a.C. as some documents of that age mention. With buffalo milk also small ricottas are produced. Buffalo meat is loved, too.
Artichoke is the other local typical product: it was labelled with IGT mark (Indication of geographical typicality). It is collected during Easter period and has a round shape. On the hills surrounding Paestum there is the production of wine and oil.
